📝 Ingredients

  • 1 cup leftover pulled pork (about 1/3 lb)
  • 1/3 cup barbeque sauce
  • 1/4 cup dill pickle relish
  • 1 can (16.3 oz) refrigerated Pillsbury™ Grands!™ Southern Homestyle Original Biscuits (8 count)
  • 4 slices (about 1 oz each) Monterey Jack cheese, each cut into 4 squares
  • 1/4 cup butter, melted
  • 1/2 teaspoon kosher salt
  • 1 cup prepared coleslaw

👨‍🍳 Instructions

  1. 1
  2. Heat a waffle iron. If waffle iron has more than one heat setting, choose Medium-High.
  3. 2
  4. In a medium bowl, mix together the pulled pork, barbecue sauce, and relish. Set aside until ready to use.
  5. 3
  6. Open the can of biscuits, and gently separate each biscuit into two parts to get 16 rounds. On a cutting board or other surface, use your hands to gently press each round into an approximately 4-inch circle. Alternatively, use a rolling pin to roll out each round.
  7. 4
  8. Evenly distribute the pulled pork mixture onto 8 of the rounds, about 2 tablespoons each. Top each with two squares of Monterey Jack cheese. Place the remaining biscuit dough rounds on top of the cheese, covering the filling to form 8 sandwiches. Gently press down around the edges with your fingers to enclose the filling, then use the tines of a fork to crimp the sides of each sandwich and seal it closed.
  9. 5
  10. In a small bowl, mix the butter and salt. Brush the top and bottom of each biscuit sandwich with the butter mixture.
  11. 6
  12. Cook the sandwiches in a waffle maker for 3 to 4 minutes, until golden brown, slightly crispy, and cooked through. The filling should register at least 165°F on an instant read thermometer. Depending on your waffle maker, you may be able to cook up to 4 waffle sandwiches at a time.
  13. 7
  14. Top each sandwich with coleslaw and enjoy.

💡 Notes & Tips

Ditch the knife and fork—add coleslaw on top of the waffle melt and fold like a taco around the slaw for a fun way to serve.

For an extra BBQ kick, add 1/2 teaspoon of your favorite BBQ spice rub to the melted butter before brushing the biscuits.

Waffle irons come in many sizes, from 4-inch to 8-inch plates, and they can cook anywhere from 1 to 4 waffles at a time. The 4” biscuit rounds should fit on any sized waffle iron, but be aware that you may need to cook 1 waffle at a time, depending on your iron.
